Kobe, a city celebrated for its breathtaking harbour views and world-class cuisine, is also home to an incredible bar scene that blends tradition with innovation. From a refined sake-focused cocktail bar
to an immersive tiki escape and an agave lover’s paradise, my first experiences in Kobe’s cocktail culture were unforgettable. Each bar had its own unique concept, yet they all shared the same commitment to precision, craftsmanship, and hospitality.

Mimosa Pudica –  A Hidden Gem for Local Spirits

Tucked away in Kobe’s lively streets, Mimosa Pudica is a bar that takes great pride in showcasing the region’s finest spirits, particularly the legendary Kenbishi Sake Brewery. This intimate yet refined space is dedicated to the art of balance, creating cocktails that highlight the depth and complexity of Japanese ingredients.

Mimosa Pudica is not just another cocktail bar—it is a tribute to Kobe’s brewing and distilling heritage. While many bars chase global trends, this one stays true to its roots, focusing on locally sourced ingredients and spirits. The use of Kenbishi Sake, one of Japan’s oldest breweries dating back to 1505, sets this bar apart. Known for its rich, umami-driven character, Kenbishi’s sake serves as a stunning base for cocktails, adding layers of depth and tradition to each drink.

The bartenders here are true Masters of their craft, with an impeccable understanding of flavour and balance. Every cocktail allows the base spirit to shine, rather than overpowering it with excessive ingredients. One standout drink was the Kuri Kuro, a cocktail that felt like sipping on liquid vermicelle, a classic Swiss dessert made from sweetened chestnut purée. With a base of Aokage shochu, chestnut cream, black beans, and honey, it was smooth, rich, and indulgent without ever being too heavy. Every sip was a perfect harmony of flavours.

Beyond the drinks, what truly makes Mimosa Pudica special is its warm and knowledgeable bartenders. They take the time to understand each guest’s palate, offering thoughtful recommendations and personalised drinks. The atmosphere is intimate, making it an ideal spot for both seasoned cocktail lovers and those new to Japan’s spirits. It’s a bar that I will undoubtedly return to, a place where tradition and innovation come together in every glass.

The Kazan Room – Japan’s Most Immaculate Tiki Bar

Japan has a small but growing tiki bar scene, with only a handful of dedicated establishments scattered across the country. Among them, The Kazan Room in Kobe stands out—not only for its expertly crafted tropical cocktails but also for being the cleanest tiki bar I have ever visited.

Opened in November 2022, The Kazan Room is a volcano-inspired tiki bar that seamlessly blends American tiki culture with the charm of a Japanese snack bar. Founded by two expatriates passionate about tiki traditions, the space exudes warmth, with wooden interiors, dim lighting, and a tropical ambiance that immediately transports you to an island paradise.

Unlike many tiki bars that lean heavily on overly sweet drinks, The Kazan Room takes a refined approach. Each cocktail is crafted with fresh-pressed citrus, house-made syrups, and locally sourced spirits, ensuring a perfect balance of flavours. There is an attention to detail here that elevates every drink beyond the typical tropical fare.

Japan’s tiki culture is still relatively niche, with other notable spots like Trader Vic’s Tokyo inside Hotel New Otani, which offers a more refined experience, and Tiki Tiki Shinjuku, which embraces a playful Polynesian aesthetic. But for those looking for an intimate, expertly curated tiki experience, The Kazan Room is the ultimate hidden oasis in Japan.

BAR UMA-LA – Kobe’s Agave Haven

For lovers of agave spirits, BAR UMA-LA in Kobe’s Sannomiya district is an essential stop. More than just a place to drink, it offers a deep, immersive experience into the world of agave spirits.

Established in 2014, BAR UMA-LA boasts an impressive collection of over 300 varieties of tequila and mezcal, including rare and exclusive bottles that are difficult to find even in Mexico. Whether you prefer an ultra-smooth extra añejo or a smoky, earthy mezcal made from wild agave, the selection here is outstanding.

What sets BAR UMA-LA apart is its dedication to both education and hospitality. The bartenders are deeply passionate about agave spirits, taking the time to walk guests through different production methods, flavour profiles, and ideal pairings. Drinking here isn’t just about savouring a cocktail—it’s about immersing yourself in the rich culture and craftsmanship behind each bottle. Adding to the authenticity is a bartender originally from Mexico, who, alongside the bar’s welcoming Japanese owner, brings a genuine touch of Mexican spirit and warmth to the experience.

Adding to the immersive experience is the lively atmosphere. The bar’s playlist is filled with Latin music, and the menu includes authentic Mexican snacks like house-made tacos and guacamole, creating a space that feels like a slice of Mexico in the heart of Japan. Even for those new to agave spirits, BAR UMA-LA offers an inviting and educational environment, making it the perfect place to explore and expand your palate.

Yet, what ties them all together is the unparalleled hospitality. At every bar, the bartenders took the time to guide me through the menu, explaining the origins of each spirit and crafting drinks tailored to my preferences. In a city known for its culinary excellence, it’s no surprise that Kobe’s bar scene reflects the same dedication to quality and craftsmanship.
