The calligraphed character “松” (pine), brushed by Godkidlla, anchors the bar with poetic weight: resilient, elegant, still. Now in its Season 6 menu, BAR PINE continues its exploration of local culture through a new lens: a fusion of New Taiwanese cuisine and New Taiwanese-style cocktails. This isn’t just food and drink—it’s narrative architecture. Dishes and drinks are built with the same intentionality as the space they’re served in. The 菜市場 (marketplace) theme evokes nostalgic market scenes, but what lands on the table is strikingly modern. Tor Day, a name rooted in the Minnan dialect, reflects a deep love and respect for Taiwan — this small yet richly diverse island of just 36,000 square kilometers. Their concept beautifully weaves Taiwan’s geography and agricultural heritage into every cocktail.
The menu takes you on a sensory journey through Taiwan’s western alluvial plains, its mountainous coasts, and the vast eastern wilderness. Each drink is a tribute to the land — earthy, spicy, comforting, and wild. My favourite: Fertile Soil combining Peat I Tabasco | Blue Cheese | Beetroot

It’s an intimate space, with just a few seats and a calm, welcoming atmosphere where every detail feels considered. The bar is run by Makiko Otsu, a skilled bartender with a thoughtful approach to her craft. I had her signature cocktail, the Tourbillon – a delicate mix of cognac, black tea, and rose syrup. It’s a layered, aromatic drink with a soft, elegant finish. A peaceful spot for anyone who appreciates a well-made cocktail without the fuss.
