During my recent stay in Ikseon-dong, I had the pleasure of visiting two remarkable bars that left a lasting impression: Gong Gan and Bar Cham. Both places beautifully encapsulate Seoul’s evolving cocktail culture, blending tradition with innovation in the most delightful ways. Let’s start with Gong Gan

Housed in a stunning hanok, the bar exudes a timeless elegance, with light wood interiors framing a beautifully glassed inner courtyard. The ambiance is serene and intimate, making it an ideal escape from the city’s bustle.

From the moment I stepped in, I was welcomed with warm hospitality and engaging conversations with the bartenders. What sets Gong Gan apart is its commitment to sustainability—house-made ingredients, upcycled small bites, and a zero-waste approach to cocktail crafting make each drink a thoughtful experience.

Recognised in the bar community, Bar Gong Gan proudly ranks No. 89 in Asia’s 50 Best Bars 2024—a testament to its dedication to innovation and excellence.

Memorable Sips

Wind-bell – Inspired by the sound of wind chimes through Korean history, this cocktail bridges the past and present with Calvados, pomegranate citric solution, black sesame falernum, and egg white. Served in a beautiful mug that chimes like a bell when empty, it was a sensory delight.

Connected Circle – A sweet and sour harmony of Pungjeongsagye, pineapple, fino sherry, lime juice, and sugar syrup, beautifully presented with a small bite. The symbolism of soju connecting hearts, much like pineapple represents hospitality, made this drink even more special.

Mora – Inspired by the history of Korean immigration to Mexico, this agave-based cocktail blends tequila, melon seed citric solution, mulberry, agave mead, and pine pollen. It’s a heartfelt tribute to those who left home in search of a new life, capturing their sacrifice in a balanced and unforgettable sip.

Bar Cham – A Celebration of Korean Spirits

Bar Cham is a place where Korean spirits shine, masterfully crafted into creative and flavorful cocktails. Located in a cozy, inviting space, the experience begins before you even step inside. With no reservations on weekends, I found myself waiting for 1.5 hours—but with blankets, warm water, and a front-row seat to Seoul’s bustling streets, even the wait became part of the charm.

Once inside, the warm ambiance and meticulous attention to detail made it clear why Bar Cham is a must-visit. The drinks are a perfect blend of past and present, each one telling a unique story through carefully selected ingredients.

Unforgettable Flavours

Jeju No.2 – A beautifully layered mix of Gosorisul, Osulloc Volcanic Rock Tea, Cham Vermouth, and Cacao, balancing earthy depth with a hint of sweetness and a touch of mineral saltiness. A sip of Jeju’s natural beauty in a glass.

Chungju Gimbap – A bold, unexpected combination of Tokki Soju, Makgeolli-Wasabi Shrub, Cucumber, Lemon, and Sesame Oil. It perfectly captures the essence of gimbap, transforming its flavours into a stunningly creative cocktail.
