During my recent visit to Bar Sumi, nestled in Regent Place at 501 George Street, Sydney, I was captivated by its intimate ambiance and innovative approach to mixology. The bar is the brainchild of Wen Wang, a seasoned bartender with an impressive background at renowned venues like Maybe Sammy.

This set features three meticulously crafted tea-infused cocktails, available by reservation only to ensure the highest quality and preparation. Here are the three beautifully balanced drinks:

• Gleaner: Nikka Coffey Gin, Genmaicha, Pandan, Coconut, Cedarwood
• Kyoho: Sipsmith London Dry Gin, Da Hong Pao dark oolong tea, Kyoho grape, Roselle, Cumin, Italicus
• Mr. Kuku: Tequila Ocho Plata, High Mountain Oolong Tea, Orange Blossom, Osmanthus, Plum, Kaffir Lime Leaf

For my drink, I opted for a Remember the Maine, a bold and spirit-forward classic, elevated with Tatsumi Distillery’s Japanese absinthe. The absinthe added an elegant layer of herbal complexity, making it a standout rendition of the cocktail.

Sitting at the bar itself is a relaxing experience. The carefully designed lighting system, the staging of bottles, and the presence of a beautiful bonsai create a serene and aesthetically pleasing atmosphere. The delicate, elegant glassware further enhances the experience, making every sip feel special.
